This smoothie was inspired by one of my best friends who introduced me to this delicious combo that works so well together. I don’t always have mesquite on hand, but when I do, this is the first recipe I will make.
Mesquite’s unique caramel-like flavour works well in smoothies (I have yet to try it in other meals). The powder comes from the pod of the Mesquite plant, native to South America and south western USA. It is high in fiber and has a low glycemic index (so is an excellent natural sweetener). It is also a great source of protein (lysine), omega 3, calcium, magnesium, potassium, iron, zinc, and can boost your immune system. Think I need to start including it into my diet more!
To make this delicious smoothie blend the following ingredients:
* 2 frozen bananas
* 1 cup unsweetened almond milk
* 1-2 TBS Mesquite powder (start with a little and add more according to taste)
* 1 TBS tahini
* 1 date (optional)
* 1 tsp vanilla extract/powder (I used a whole vanilla pod this time)
* pinch of salt
I topped this bowl with my crunchy buckwheat and goji granola (see blog), hemp seeds and goji berries.
