Recipe of the Day: Gingerbread Bites :-)

My new favorite treat…    Raw Gingerbread Bites!

 

If you are not a huge fan of ginger, either use less, or add more of the other spices (e.g. cinnamon).  Ginger is one of my favorite spices and has numerous benefits such as:  helps with nausea, indigestion and other digestive issues, helps with migraines, assists in flu prevention and treatment, relief from PMS cramps, has anti-inflammatory and anti-bacterial properties and so much more.  I add fresh ginger to almost everything, from juices to smoothies, warm porridge, stir fries etc…

 

To make these delicious bites of goodness:

 

In a food processor, combine 1 cup almonds (preferably soaked for at least an hour), 1/2 cup sunflower seeds, 1/2 – 1 tsp ground ginger, 1/2-1 tsp cinnamon, 2 cloves ground, and a dash of cardamom (NB: for a stronger ginger taste you can also add a large knob of fresh ginger, grated).  Blend until well combined.  Add 1 cup dates (soften in warm water for 1 hour beforehand if your processor is not too powerful).  Add a few more dates or raisins if you would like a sweeter treat. Roll into balls and place in freezer in a freezer-proof container (they will last much longer this way, and the temptation will be less…well that’s the idea – “out of sight, out of mind?!”)
