Recipe of the Day: Dark Chocolate & Roasted Hazelnut Truffles :-)

My Mom decided to make an unleavened cake for Pesach/Passover which required grinding roasted hazelnuts into a fine powder… however, she left the mill on a few seconds too long and the nuts turned into a paste, much to her dismay… so she handed them to me and asked me to try and save them 😉 And so these truffles emerged.

 

A quick and easy recipe requiring just 3 ingredients (and a pinch of salt)! The dark chocolate flavour combined with the roasted hazelnuts is reminiscent of Nutella (in my pre-healthy days of course 😏) Recipe • 150g whole hazelnuts, roasted (place on tray in hot oven for a few min or pan-fry)
• 2 TBS cocoa powder
• 1 cup dates
• A pinch or two of salt

 

Grind roasted nuts with cocoa powder in a high speed blender/mill/food processor until finely ground (if you blend too long and it turns into a paste, don’t panic! It will still work 😉) Add dates and blend until combined (I blended the mixture in my @nutribullet_sa but any processor/high speed blender work. Tip: soak dates for 30min if your processor usually struggles). Take teaspoons of the mixture and roll into balls. If desired, roll into a topping such as crushed nuts or cocoa powder (I used pecan dust). Next time, I will insert a whole roasted hazelnut into each ball to create a “Ferrero Roche” type ball.
